As this is prototype, bite the bullet, get them without the varistors and solder them to the first PCBs.
I hope your PCB design has test points situated on it for easy troubleshooting.
Such as a good;
GND test point.
powersupply rail test points.
major input and output signal test points.
LED indicators on ALL powersupply rails to tell you it is alive.

The prototype must be the same as the one that will be ordered in quantities, I need to pick one to test if everything works good together, sure I can buy one and solder it but it will not solve my problem.

The philosophy here is, get your first prototype going, stopping for some simple suppression components to be machine soldered, when you can do it yourself and keep going, is not very productive.

The probability of your prototype PCB being the final production PCB is possible, but there is a guy called Murphy looking over all our shoulders.

PS, It would have been advisable to show your PCB pattern as a second or third pair of eyes can be very helpful.

If you must use only what the PCB fab can supply, ask them what varistors they can supply. I'm sure you would not be the first customer to ask about parts that are apparently not in their catalog.
