Knowing how, when and where to ask questions is an important part of the learning process.
Blink the LED is a good starting point. It is basic but can be quite a learning experience for a student when they figure out why the LED is not blinking.
I vote with @Idahowalker. Blinking LEDs are a great way to start. Difficulty can increase controlling more LEDs, fading them and blinking them in different rates.
How old the students are?
