What relay can you suggest that we can use to let the arduino control a car's electronics. We want to make an android controlled electric bicycle which will use a car battery.

Before you can choose a relay, you need to know how much current the switch contacts need to be rated for.
I’m guessing you might want speed control too, so you will need a semi conductor switch or commercial speed controller.
How are you going to control a bike will an Android app? If you are only holding on with one hand , the other on the phone, when you start off , you are likely to fall off - especially if you don’t have a speed controller.
Why not use a twist grip on the handle bars, much easier
