I was wondering if anyone knew what the part number was for the mating connectors (for a shield board) that match the 1x6 header on the Ardunio Uno? Specifically, it would be nice to know which ones from the Milmax catalog.

The headers themselves are standard 0.100" pin headers. The only aspect to watch is the spacing between D0-7 and D8-13.
Well that's 0.1" Pitch (spacing pin to pin), the pins themselves are 0.025" square posts, or someflat smaller flat blades.
Milmax tends to be expensive. Unless you are after a lot of them, this collection from sparkfun might make more sense
Or maybe some of these if you want to use standard perfboard
