The trouble with Arduino though, is that a simple project like you describe is inclined to quickly grow, no matter how pure your original intention.
Is the project a front-end to a PC or a stand-alone?
If the latter, consider these:
Would you be inclined to use a more sophisticated temp sensor?
Would you like to record the data?
Would you like to time/date stamp the data
Would you like to display it?
Would you like to remotely access the data?

If yes to any of the above, there will probably be a yes to all of them eventually, and you might as well get a Mega if you haven't already bought a Uno. This is not necessarily because of all those extra pins, it is because of the extra memory.
