Hello,
I'm working on a project where I want to control and send data, for example, maybe toggle an LED on and off or have a motor turn clockwise/counter clockwise through an iOS device.
I know this is easier if I am using an android, but are there any sources or any feedback from you guys on how to start with this if using iPhone? How to connect it properly?
I have the Arduino board and bluetooth shield board currently.

This is true but mainly in that there is less selection of IOS apps,and you must use a BT4 device (BLE).
I can't comment on the former but I don't think the latter is really a liability, you just have know about it. And pretty soon will come the time when everybody will be using BT4 anyway. BT4 devices like the Tinysine are much the same price as an HC-05 these days.
