Are there any educators out there using Arduino to teach electronics in high school or jr high? Can any of you suggest curriculum or projects to start out with?

There's a lot of Arduino starter kits out there: arduino starter kit - Google Search

They all come with Arduino, breadboard, tutorial books, the components needed for the projects, etc.

Pick one.

I got into arduino to help my son with his science fair project. So there are highschool educators like you working with kids on arduino.

There are LOTS of Educators teaching with Arduino. I have sold 100's of Starter Kits, both standard and customized to a particular University.

Worth also looking into http://shrimping.it , which shares a homebrew design intended to help educators by reducing the per-student cost of Arduino compatible prototyping, as well as gradually curating classroom and workshop resources to help adopting this design.
