Before I start with my project I need your help

Hello all,
I'm making a project which will be controlling 3 actuators and will input 5 analog sensors
Im thinking about using Touch screen to input the set-points and monitor data
I have looked on the Touchshield and the SMARTGPU , what I dont know is that is it possible to use the SMARTGPU or Touchshield
to monitor data and change set-point and at the same time I have 3 pwm control outputs for actuators and 5 analog sensor inputs?
Im using Arduino UNO. if the arduino uno have no enough pins can I use arduino mega?
