Bench power supply revamp

Good day all.

This is my 1st post here, and my 1st Arduino project.

I have an ambitious 1st project.

I have an old analog 0-20vdc bench power supply, that I would like to revamp, and bring into the digital age.

The current power supply has a single turn pot to adjust the voltage, I know I could fit something like a 10 or 20turn pot to give this power supply more accuracy.

What I really would like is to remove all the inner workings, and replace with an arduino.

I am looking to add a 2x16 or 4x16 LCD display, rotary encoder with press button.

Like I said this is my 1st project, and I think I am being very ambitious.

I have worked with other Microcontrollers in the past, but this is my 1st time with Arduino.

So can you please give me help and advice to where you think I should 1st start with this project?

I am using the Arudino UNO R3 board for testing.

Look up information on Digital Potentiometers for a start. 8 bit would be a bit coarse for adjustment, need 10, 12 or 16 bits.
