Depends on what kind of projects you want to do. Browsing the books at Amazon can give you table of contents etc.
The books of Simon Monk are good and fun,
Arduino Workshop of John Boxall is also very good.
but there are many more.
Go to Amazon.com and search "Arduino C programming" and start reading the reviews. I'm biased, but the 2nd edition of my Beginning C for Arduino might help. Pick a topic you want to investigate (e.g., "pointers"), find the web page for the book, and click on the "Look Inside" banner on the book's cover. Scan the TOC for the topic of interest, click on that area of interest and start reading. If you don't like what you see, try it for other books, too.
Arduino Workshop (John Boxall) was a good book for beginning. Most all information you can get online or even here at arduino.cc. But there is nothing like having a laid out book for really learning. I get my books from oreilly.com. They are usually running a sale, so I have bought most of my books at 50%. I just wait for the one I need to go on sale (I get an email notification of the weekly sales). I am a little addicted to getting my technical books there.
Arduino for Teens by Robert Patterson and Kathleen Patterson is a good book for beginners. Robert is also a frequent contributor on the Arduino forum. He touches on several concepts that other books gloss over. Jeremy Blum has a new-ish (2013) book out called Exploring Arduino: Tools and Techniques for Engineering Wizardry. His series of YouTube videos are really excellent for the beginner to intermediate student. Practical Electronics for Inventors, Third Edition is a great reference book with a lot of nice graphics. But if you're an ee student, you may not need it.
I have written a book that may be of interest, but my target audience was younger than the origianal contributor. I thought that youngsters today are quite keen to learn, so I made fun to experiment and learn.

Yes, the Arduino Cook Book (Author:Michael Margolis) is very recommendable.
If you are new to Arduino, some things will be hard to understand.
After two days of frustration you will like this book.
