I want to use them to fade light, choose item in list (on LCD), adjust volume, etc.
Do potentiometer values matter a lot or any will do?
10K will do for all of that. Value on pots aren't critical.

Will you be reading the pots from software everytime, or using them directly in
circuits??
Mainly from software, but for things like adjusting screen contrast they will be used in circuit directly. That makes me wonder, I do I read the potentiometer value from software?
From software 10k (linear) is a good standard value - if mounted remotely add 0.1uF cap to ground on
the analog pin to reduce noise.
Any analog circuit and the value depends on the circuit - can't help there (sometimes log
law or reverse log law will be appropriate for instance).
