I will make a jumbo matrix for a school proyect, i think use demulteplexer and a Arduino Mega but i don't know how a i can use the PORT Registers with this Arduino Mega...

I doubt of you will be able to do this because your refresh ratio will be too high. That is the time spent on will be too short to the time spent off, resulting in very dim LEDs .
As for port control look at the pages in the education section on this. If all else fails look at the data sheet for the mega chip and look at the schematic of the mega and see what port translates to what pin.
As 8x60 is not so different as 8x8x8, have a look at this instructable (especially from step 70): http://www.instructables.com/id/Led-Cube-8x8x8/step70/Run-the-cube-on-an-Arduino/
There should be a download to his code for Arduino available which should give you some hints. Hope this helps.
