Thank you again for all your help. I have connected it as shown, the LCD screen now reads ‘system reset’ and when I press the button the screen dims but the message does not change. My computer is updating at the moment but when it is done I will post the oscilloscope probe reading.
Edit: The probe reads at 7.231 mV until the button is pressed, then it reads about 3.78V
Update: It now works (sorta!). When I press the button the message changes from "do not touch your phone" to "system reset". The button doesn't switch between the two unfortunately, it only works once but this is exciting progress!
Further update: It finally works completely! After changing some things in the code the message now changes as desired. Thank you very much for your patience and suggestions.

It sounds like you are shorting the supply when you press the button.
What do you get when;
- you connect your scope between 5V at the button and gnd.
- you connect your scope between the arduino input pin side of the button and gnd.
