The adafruit ADC has an internal reference voltage. The Maxim part requires an external
reference. I think the part you have would be fine once you clean up the wiring and separate the strain gage & ADC from all the digital wires. Some more capacitance at the end of the analog power runs would help also. Supplying the strain gage with a regulated voltage would likely help also. How much current does it need?
