Sorry guys but I tried everything you've suggested but the value I have from the pot is always 0.0. I don't think I did something wrong but never know... I have a value of ~4610 from A0 when not connected to anything, and 0.0 from A1 when connected the output of the pot.
I think I'm gonna have to skip the ADS1115 and try with another ESP. I just need to minimize the current during the deep sleep mode so I can use them for months or years on a Li-Ion 3.6V.
