I have a Byte Brothers BBT858L multi meter with thermometer.
Can I tap into anywhere on these guys (or multi meters in general, I have a bunch for some reason) to have it report data to the arduino and use it as a sensor (for temp, then with another meter for amps, volts, ohms, etc...) ?

The link you provide does not tell if the device has an external interface.
If you do not mind opening the thing and find the right place to connect to yes it is possible.
