The only people that can answer your questions, as asked, are people who have built a cansat with an Arduino and know what the "missions" are. How many people do you expect have done those things. If you describe the cansat and the mission requirements, you may get help from more people.

The purpose of the CanSat programme is that you sumulate the thought process, planning and construction of a real satellite.
So rather than ask which Arduino and sensors have people used go back to the beginning, what do you want to achive with the project ?
Its easy to duplicate what has been done before, far better to do something that is new and different.

Interesting project. Will be fun working on it.
Arduino may be suitable for prototyping, but except for the Pro Mini they're too bulky for the final product. Most likely you're better off making your own PCB.
More importantly: what do you want to do with it? You're supposed to come up with some scientific experiment which you then build into the can.
