The insurance does not provide / not cover the vehicle, but the damage to third parties.
The law may be different in France but in the UK and Ireland you would still have to notify the insurers of any changes to the vehicle if you only have 3rd party insurance. Indeed they would probably be more worried about risks to 3rd parties due to alterations because the compensation payout would be much higher.
