This is because when you are flow soldering the chips in an oven moisture ingress in the chip can cause physical damage as it expands into steam. To stop that you keep the chip in a low humidity environment before using or you bake the chip for 24 hours at high temperature before using.
Either way unless you are planning to use a reflow oven it is nothing to worry about.
