I might be thinking about this wrong but if your driving a LED off a saturated mosfet, you still need a current limiter resistor in series with the LED or its going to go POP.

I was also going to say, if you use a power mosfet, then you no longer need such a large over rating. A 1A LED would probably be happy with a 1.5-2A power mosfet.

Yes, no matter what transistor you use to turn on a led, the circuit still needs a means to control the current through the led so as to not exceed it's maximum current rating.

A 1 amp led should not use a simple transistor and resistor to try and control current through the led. Such 'power' led really should always be driven by a constant current circuit.
