What software would the fellow Arduino community recommend for:
Designing small boards to fit onto the Uno and support a few chips, etc?
I'm going to have a go at etching one

There are a lot of people who like Eagle Ver 6X you can get a free "student package" From Cadsoft. Pin and size limited but for 80 X 100 mm boards 2 side boards with one schematic Sheet.

I also recommend eagle.Are you thinking make the board at home or seend it to a manufacter house?

Very cheap and excelent results
Search this forum and google for "pcb software". You'll find many, many, many threads on this topic.
I (forced myself) to learn Eagle.. as it seemed the most popular/supported, with community & component libraries..
Others to look into may be:
KiCAD
DipTrace
(I know there a few more but their names escape me)
I have used Eagle to make a schematic, and pcb design..
I print out the pcb pad footprint only.. (scale 1, bold checked, and mirrored checked)
on glossy photo paper (4x6 stuff)..
cut out my design..
iron it onto some RadioShack copper clad board,
cut out the section on the copper clad board with my bandsaw/dremel..
get my etching solution.. and drop my pcb in it.. I shake it around every couple minutes.. minutes later PCB is done..
run under cold water....
dispose/replace etching solution
use nail polish remover to remove the remaining toner on the pcb, to reveal the left over copper traces
solder!
