I was using the AI assistant and used the apply button only for it to delete all my code to paste it its suggestions and ctrl+z does not restore my old code?
Is there any way to recover my previous code

I have submitted a formal report to the Arduino Cloud Developers regarding the lack of an "undo" capability for changes applied by the experimental Arduino AI Assistant feature. I'll let you know if I receive any news from them on the subject.
I'm not sure whether this is possible. You can contact Arduino technical support to see if there is anything they can do to recover the code:

Hello again @wouter_vokar. I just wanted to add an update regarding this part of your report. The Arduino Cloud developers have now added the ability to undo the changes to the sketch that are produced by applying suggestions/fixes from Arduino AI Assistant.
