I am trying to come up with an idea of how to track RC cars in a race by what color the car is so that once the required laps are reached, the winner can be decided.
Is this even feasible or is there like a much easier way to do something similar? Student newbie here letting my imagination fly!

Thinking about the matter, a color sensor to track a moving 'car'. The sensor would have to, in opinion, be mounted above the track so it could view the track and the color sensor will only be tracking one color. So 6 cars, 6 colors, 6 color sensor, 12 some type of motors to control the sensor positioning for tracking. It's possible.
Consider 1000's of runners at a starting gate and tracking all the runners and how those runners are tracked.
The Arduino compatible Pixy camera can be trained to detect and report the positions of variously colored blobs.
Do you want to follow the car for the full race along the track, or only record lap times based on the car's colour?
The latter could be done with a break beam sensor (telling you a car is passing through) and a colour sensor to tell you which car it is. Of course you still have to make sure when racing multiple cars that no two cars at the same time can pass through a single gate.
