Diddle with the color controls on the TV until the text is the color you want.

The TVOut library writes one color text. If you don't like that color, you need to distort the colors on the TV until the text IS the color you like. Of course, the rest of the picture will look like crap. But, hey, the text will be the right color.

Green text will mean that all the actors will look like Shrek, blue text will mean that all the actors will look like Smurfs and yellow text will mean that all the actors will look like Big Bird. :)

I’ve been trying hard to post links instead of just http:// strings (which the old software would automatically interpret as links.) (sigh) Quite a few of them have worked OK.

Yes, it can be done. Generating the necessary color burst and color signals is hard on the microcontroller. It's much easier to use a few external components. The AD725 chip is very useful here.
