I am always getting into a mess attempting to load a sketch onto a board because the com numbers do not correspond. What, in simple terms please am I doing wrong?

You are doing nothing wrong. The assignment of COM ports happens independently in the Operating System. You have to take what it gives you or:
- Open the Device Manager window
- Click on Ports (COM & LPT)
- Click on the line for your Arduino board
- In the Properties window that opens, click on the Port Settings tab
- Click on the Advanced button
- Click on the Com Port Number drop-down
- Select your desired Com Port provided that it is not already in use
- Click on OK two times
- Close the device manager
