I have seen pots like those ind old Tektronix test-equipment. The output is read by an analog input, and the software can then detect how long the pot has traveled by the amount of change in voltage. A quick jump from low to high, or vice versa is no problem, the software know this is only possible by turning it past it's zero-point.
