How is this possible? Say I wanted to read the analog value of this, after 360 degrees of rotation does it just go back to analog 0?
Yes, eventually, as there will always be a small wiper terminal 'discontinuity' between the 100% and 0% resistance where the wiper will not have any connection to the other two pot terminals, and will present a floating input to whatever you are wiring the wiper to. This may or not be something you have to deal with depending on the application the pot is used in.
