Control ac 3 phase motor with encoder

Hi my project is to control a machine that cut iron sheets it has a 7.5kw 415v motor i must be able to count number of sheet and length via an encoder it also
has a shear and i must be able to reverse the motor in manual mode. Can anyone help me please thanks.

Do you also have to stop the motor before reversing direction? How is that being done right now?
