I'd like to control some white LED strips that operate at 220v DC. I'd like to make a dimmer and connect with Home Assistant. Is it suitable to use with a mosfet attached to ESP running ESPhome? Would you be able to recommend a mosfet? thank you.

Sure - yes it's 220v DC. It comes with an AC/DC adapter and I checked it with a multimeter.

Don't tinker with it.
Find a much lower voltage array.

PS. What part of the world do you live, 220Vac mains.
I'm in the UK. The adapters not very interesting unfortunately it just labels the input AC and output DC with no ratings.
So what is your question?

The C E means Chinese Export, not the standard that CE is supposed too.
It indicates that it is doubled insulated, get it checked by an electrician or someone licenced to do appliance testing.
You need to know if the output is fully isolated.

It's probably just be a diode (or full-wave bridge rectifier) to convert AC to DC, with a resistor, and LEDs in series.
You could dim that with a MOSFET as long as the MOSFET is rated for the voltage & current. Note that 220VAC RMS is 308V peak so the MOSFET should be rated for at least 350 or 400V.
And you should put an optical-isolator between the Arduino and the MOSFET to protect it (and yourself and your computer if connected) from the lethal voltages. That would probably require some additional circuitry to hold-down the the voltage on the opto-isolator and MOSFET gate so they don't burn-up.
