what program/programs are used to create a schematic for your projects? I primarily work on ubuntu 8.04 and osx 10.4 at home, but I have windows xp at work and can install it at home if need be.
i'm assuming autocad or some tool like that, but i'd prefer a free version or at least a cheaper one until i get into this more.

This is a freeware software that many use but the size of the board is limited if you do not want to pay for the full version.

There's a bunch of tutorials on using Eagle, and it's one of the few Schematic/PCB cad packages that has a version for Macs.

kicad is "open source (GPL) software" for schematic and PCB design.
gEDA is another open source project.

and others
Most of these are easily installable on Fedora, Ubuntu and other Linux distributions
Some of these might also work on OS X and other operating systems
