Creating an LED display with eight 64x64 LED displays

If you have more technically minded individuals in your group, then this is the place where they should represent the group. I'm sure you have different talents which would (and will) outshine theirs in other situations. A good team needs a mix of talents, everyone knows that.

A Mega may be able to drive one, perhaps two, of these panels, if you limit the colour palette to 7 colours. The problem is that although a Mega has more than enough pins and a reasonable amount of memory, it's processing speed is not adequate for much more than that. If it has to deal with WiFi communications as well, it's going to be swamped, resulting in terrible stuttering and flickering of the displays. This kind of panel needs constant attention from the MCU to maintain a smooth bright display, and the more panels you connect and the more colours you want, the more processing power you will need.

To maintain a smooth display on multiple panels, and a responsive WiFi interface, you probably need two processors. Any project like that is going to be a serious challenge for an experienced engineer.
