Creating blue tooth with 12 to 16 analog inputs

Hi, I'm new to arduino. I have used Basic STAMP before, but I think that Arduino is a better route to work on some projects of mine. I have an independant study for one of my classes at school. The project requires a minimum of 12 analog inputs, although 16 would be useful. Also a 6 or so digital inputs would be nice too. Blue tooth wireless is not necessarily a must but would be very useful.
I'm assuming arduino would have the necessary ADC's that I'd need.

Does anyone have any ideas on how I should go about this? Will I need to develop my own Arduino?

notes on the design:
analog:
10 potentiometers (6 linear, 4 semi-optional rotational)
6 vibration sensors
digital:
a few optional switches

Just think of it as slides and dials.

Has anyone added bluetooth to the Arduino Mega? I saw there is a shield to make it it wireless. Any comments or direction would be really helpful
