The application framework on which Arduino IDE 2.x is built does not support modification of individual elements of the existing theme. The developers are tracking the request for the addition of such a feature here:

Have you tried the "Dark High Contrast" theme (you can select in the Arduino IDE preferences)? The "thumb" colors have pretty good contrast in that theme:
If the preinstalled themes don't meet your requirements, you can try the thousands of free open source 3rd party VS Code themes that can be installed in Arduino IDE. Instructions for installing them are provided here:

You can also create your own custom themes for Arduino IDE if you like. A community member provided some information about that subject here:
