Dc motor control with time interval

I'm just starting to get familiar with Arduino. I want to create a DC motor controller to modify the speed and time. Example. Controlling a Pickleball machine ball toss speed, say 35mph, wait 2 seconds then 20 mph toss, wait 2 seconds, and toss at 10mph. I also need to be able to change the parameters while practicing with the machine, with a control remote, or better with an iPhone.

Give us an idea of your skills, what projects with the Arduino have you done before?

No experience whatsoever.
I was hoping for someone to guide me through or sell the actual connector already built and for me to plug it in. Don’t even know if that’s possible.
The machine has a top and a bottom dc motor with a rechargeable battery and an electrical front panel that has a switch to turn on and off, a rotary knob that adjusts the ball feed speed another knob that control topspin and underspin and a final knob that controls a carousel with how frequently the balls are tossed
