I want to control a couple 1000 addressable rgb leds that take 5v (not a strip)
How can I determine what power supply I need?

Find the datasheet of the LEDs and using the data inside it, figure out the current that each LED takes when all three (red, green and blue) parts are at full power. Multiply by "a couple 1000". Add 50% to 100% just in case.

This would be right assuming that you want the option of turning them all on at once. If you have an application in mind that will only use some of them at any time, then it's the maximum simultaneously illuminated LEDS you need to multiply by.
