Making circuits.
Resistors have as many uses as I have pairs of socks (about 3½ 
), and different situations demand different resistors.
Read up on Ohms Law and you will have a better understanding of what resistors do.

Well, I know resistors are used to limit voltage (or... ?), but I don't understand what 100k, for instance, is limited to. Can't be 100,000 volts, because that'd be a ton.

Voltage, resistance, and current are all related by Ohm's Law.
The voltage dropped across a resistor is dependant upon the current flowing through that resistor.
The "100K" is 100,000 ohms. At 1mA, a 100,000 ohm resistor will drop (100,000 * 0.001 = 100) 100 volts. Of course, if there aren't 100 volts to drop then the maximum available voltage will drop and the current will also drop.

You are not having diffrent types of resistor as the post title says they are all the same type. What you have are diffrent values of resistor.
Look at wikipedia for articals on this.
