Can anyone provide me with an explanation why diodes need to be set in parallel with motors to prevent kickback voltage? I just don't see why it wouldn't be in series if it prevents electric flow..

It does not prevent the flow it shorts out the energy of the flyback current. A seriese diode would either stop the motor turning on or do nothing depending on what way round it is.
