Just curious is there a reason DS1307 based RTC sketch examples I'm seeing use 57600 for serial communication with computer, rather a more common 9600? Would it affect timing somehow if I use different baud rate?
Arduino to PC can be whatever speed you'd like. Make it fast enough to keep up with whatever data you are sending out.

There was a long thread a while ago that started out with the question about why 9600 was so common in Arduino sketches, when it is so slow.
A number of us no longer use 9600 as a value in sketches, even when it doesn't really matter, because of that thread.
It appears that the library author was paying attention to that thread, too.
