I am trying to control the temperature of a freezer that works between -20°C and -10°C. The problem is that the error curve in the datasheet shows that the typical error from -10°C to +85°C is 0.5 °C.

The uncertainty specification is ±0.5°C Accuracy from -10°C to +85°C. The only way to know exactly what any given sensor on any given day actually is would be to place a known standard of measurement beside your sensor (same thermal environment and note the difference between your unit under test and the known standard. In the case of a freezer I would figure the uncertainty (accuracy) of the should be close enough using manufacturers specifications. Then too, depending on how good the uniformity is of the freezer you really don't know if that 0.5 degree C matters.

The datasheet says +/-1°C for the range -30°C to -10°C.
Hm, I am reading +/-0.5°C for the range -10°C to +85°C and +/-2°C for the range -55°C to +125°C in DC characteristics table.
