dual channel decibel/temp datalogger

Hi, I am brand new to Arduino but am told this is my best bet to build what I need. I have to record temp and decibel levels over a period of 10 days on both sides of a non-removable panel. I will have a 1/2 inch hole through which I can pass sensors. The readings needn’t be terribly exact. Is this possible (affordable) with an Arduino board?

One reading a week? One a day? One an hour?

Reading and storing temperature data on an SD card is pretty easy. Decibel values less so, depending on what you are using to measure the value. Audio signals are generally AC, which is not really compatible with the Arduino. They are also pretty small values, so they are hard to measure accurately. An opamp to amplify, and shift, the signal to all positive values will probably be required.
