EMG signal processing for robotic hand STUDENT PLEASE HELP

Hello everyone,
I recently bought the Olimex Shield EKG-EMG kit for my science project which is arduino compatible. I have been looking on there website and only have found support on the EKG processing and not the EMG processing. I am making a robotic hand that is 3d printed. My hopes are to use the emg signals in my arm and mirror my hand to the robotic hand. It is basically just servo rotations. I am new to using shields so a little bit of guidance on how to make the servos turn when the EMG signal is received and also how to process the EMG signals would be great. I am using the arduino rev 3 board

Thanks
