You connect ground and signal from the 3-wire lead to the Arduino and use the Servo library.
You can power the Arduino 5V from the BEC if you want, but I personally wouldn't (I've seen ESCs explode!)
In a typical craft you'd use the receiver battery pack to power the electronics, as this has modest load and won't droop on power surges. Save the big battery for ESCs only.
