If I connect my ethernet shield to my internet, can someone hack my internet? Does the arduino remove the port protection on my ethernet? Is there any danger, as in can I do the wrong thing and have my internet hacked in any way?
By your "Internet" do you mean connecting your Arduino as a client to your router that has Internet access?
If so then no, the Arduino is still inside your local network and really presents no greater risk than any other connected client.
If you are exposing an Arduino web service/server then you will need to enable the access through your router firewall / port forwarding. By doing this you may expose your network to potential threats.

Basically I want to read the temperature with my Arduino and display it on my PC or smartphone etc. anywhere in the world, by using an ethernet shield.
I'm not sure what that is (ie client or server thingo), but my Dad is worried about the security of doing that.
There's a few ways to do that. Presenting a web server from your internal network "to the world" requires some network configuration on your router. This (if not done correctly) can increase your security exposure.
You might be better to look into something like Arduino IoT, where you can display simple dashboards that are linked to IoT connected devices. The devices connect to the Cloud, so present a lower risk profile.

Cloud IoT doesn't see my device when I try to set it up. It says "device incompatible".
Ah ok.. might need an IoT Arduino, or an ESP32/8266 device. There are probably other IoT services.
