As you seem to need lots of I/O pins a Mega would seem the obvious choice. But you need to count up all the pins you require and check with the specs for the Mega.
It is possible to use I/O extenders to create extra I/O ports for an Uno - but I think that would just make the project unnecessarily complicated for a beginner.
