Controlling an analog multi-effects box for guitar, storing presets and having a display with either a simple number or if possible a name for each set of stored control settings. I have seen digital pots that have six channels and 256 steps. At this point 6 pots and some additional switching would be a great start.. 
Can perfectly be done, I cannot find the thread but last year a similar project was discussed on this forum
(The audio section might be a good start)
