I would like to monitor the water quality of a fish aquarium to make sure the fish stays alive:

1. What do I need to monitor (oxygen level...) ?
2. Which (low cost) sensor can do the job ?

to make sure the fish stays alive:

Oxygen (if you have a water pump to circulate the water) should not be an issue for the fish. Overfeeding is usually what kills them
