Does anybody knows of a flexible pressure sensor that could accurate measure pressures that human hands can produce. Approximately 2-5 kg. Important thing here is flexibility.

Dear Sir : I am a brand new member and am cruising thru the posts and helping out where I can .
Your pressure sensor for human " tactile " measuring ; yes there is / there was a solution . About 20 years ago , companies used to ship their IC's in a carbonized foam rubber pads for anti-static control . I played with this stuff about 15 years ago .
The foam has a FiXED resistance per unit thickness . When compressed , this resistance value falls towards zero ohms . I made pads by gluing small foil pads on each side of the foam ( around the perimeters only to maintain electrical contact ) and they worked out really well ! I wish that I had an Arduino then !
The problem with this foam would the sourcing there-of . Haven't seen it in years .

Its called Anti-Static foam. Can be found in IC packaging. Another solution might be this product by a friend of mine:
