You will have to develop a flow curve for air, just like the data sheet you linked to that has curves for natural gas and propane.
It's called: calibration.
Sorry I might just not be seeing it but how would this help me find the velocity?
The proper graph will give you the flow rate thru the sensor. The velocity of the flow will depend on the area that your gas is flowing through. Have you measured the area of your part?

Look at it like this. The faster the airflow through that sensor, the greater the "cooling effect" on its internal thermopile and, hence, the lower the voltage at the output terminal.
As has been pointed out, you have to calibrate it.
That sensor appears to be intended for low flow rates like a couple of liters per minute.
You can use an Arduino to measure low voltages directly (use a voltage reference of say 1.1 volts) or use an op amp to amplify the voltage.
