Can I pair an xbee arduino shield with an iPhone
XBees can not talk to iPhones. Unless you mean the not-really-an-XBee-WiFi module.
If that is what you mean, the XBee WiFi does not create a network. It joins an existing network. Your phone doesn't create a network, either. It joins an existing network. Two devices on the network can communicate.

You can pair your Arduino with an iPhone on bluetooth, using this module.

I only used Android for BT communication with Arduino, specifically using an app called BlueTerm.
