In the beginners kit.
Project 1, has the resistor between the 5V and LED.
Project 2, has the resistor between the Ground and the LED.
Does it not matter where the resistor is as long as it's on the circuit?
As long as the current going though the LED also goes trough the series resistor.

It doesn't matter.
A simple circuit is a single loop, and the same current has to flow around all parts of the loop
(ignoring very high frequency effects). This means every position in the loop is equivalent.
